mine would probably be something simple like "Son of a Bitch". Not just bound to zombie related deaths, this can be used as a dying phrase in any situation

I think I would quote Cpt. Rhoades from Day of the Dead "choke on 'em" choke on 'em" he is of course refering to his testies i.e balls or nuts!

Windows breaking. Debris being thrown about. Gunfire filling the room until the last of my comrades has fallen. Standing corpses crowd in as I realize I have no chance. I set my sights on one of the first of them to have broken through. Moving forward, I place my hand under its jaw and hold it tightly as I stare back at this creature's hollow gaze. The others begin tearing into my flesh, but I hold steady. The mouth opens, preparing for a feast. My grip tightens and my lips part as I scream, "F***. YOU."
This thing used to be a living, breathing person with a heartbeat, maybe a wife and kids. But no. That's not how it is anymore. No longer a man. No longer a person. This thing is not human anymore. And now it wants to consume that which it used to be. So here we are. I place my pistol under my chin and recite one last line:
"And you already know how this will..."*bang*
