Why is it an assumed fact that cold weather will stop zombies?

They have no body fluids to freeze.

zombies would have body fluids for quite a while that could freeze, they wont dry out immediately if they do at all. note the fluid in most parts of the body would be congealed but still able to freeze. the real reason behind the belief that zombies will freeze is that flesh and even bone freezes. flesh (from the little research i've done) seems to start freezing around the same point as water (32F, 0C).

here's an experiment, go to the store and buy a pig's leg (from shoulder to foot) and freeze it in your average freezer. if you have a temperature control for it set if for the around 28-34F. take it out after a few days and see how easily or difficultly you can move the joint at the knee/elbow. you'll likely find its frozen enough to prevent movement or at least hamper it. remember although a zombie never tires, its still only as strong as the human it once was, so it would atleast slow an undead.

and while we're on the subject of frozen flesh i should give my opinion of shattering zombies. anyone who has taken meat out of their freezer to thaw it for dinner would know that its often rock hard. i have no research to back this up but i've hit meat of a counter, dropped it on the floor (plastic wrapped of course) and even hit it with a hammer to little effect. so i dont believe in shatering zombies personally. (if you can prove me wrong please feel free, i think its a kinda facinating subject :D )
also on a secondary note, you have remember that zombies have no circulatory system to transfer heat through the blood or core body heat to prevent even a little freezing (which renders blood heating useless anyway as you need core heat to warm the blood) and muscle friction alone most likely wont keep a zombie from slowly freezing.

They have body fluids. Roting and decaying body fluids but they still have body fluids. Muscle, organs, and tissues all freeze also.

The zombie might be slowed but still can move. but in cold is the worst for a zombie outbreak.
