Let's assume we have a mob of 100 zombies trapped in a box. The zombies have NOT died, just became infected.

What I want to know is, why is it that they don't even consider each other as a food source?

I realize that zombies hunger for living flesh, which makes sense. So do other carnivores... So a zombie wouldn't eat a dead zombie. but what I don't understand is, if a zombie isn't dead, why wouldn't another zombie eat him? He's living, isn't he?

Is it an instinct?

Perhaps it is an evolutionary adaptation of which contributes to the successful propegation of the virus. Hypothetically, the virus might cause its host to secrete a pheremone that tells the other infected that the it is not a food source.
This may be part of the reason why many Zombies do not fully consume their victims as this reaction may be triggered only shortly after the death of the host.
