What would you use to protect yourself against an undead bite.

It has to be battle ready and effective, flexible, and tough enough to withstand "dental penetration"(!?), although a few bruises, post-melee, are acceptable (and they carry HUGE bragging rights!)

Would something like a good dive suit fit the bill?
Form-fitting and made for abrasion resistance. Slippery enough to keep you from being grabbed. Some are even anti-microbial. It would keep out water at the neck and wrist; or infected blood.
Thoughts?
how about an armored dive suit? lol, you'd prob have to make it tho lol
genuine biker leather jacket and leather chaps? teeth cannot penetrate a inch of cow hide..at least i dont think they can xD
I'm with the biker leathers myself.

Tough, waterproof, splatterproof, flexible, repairable, and Damn.. you'd look cool in a fight!
Biker is deff the way to go but I wouldnt go leather, I would go with the modern kevlar type:

it's waterproof, fireproof, biteproof, stab/slashproof, light and with gloves, boots and helmet a suit will encase the whole body 100%
why helmet?
My face and neck etc are not naturally bite-proof
i guess so... but try something less hot and cumbersome, unless you live in a cold area.
well damn, when you have a jacket such as this...

you must call it your "Armour" and it shall be death proof.
i just say so because these items can be or could be "pull out of the closet" ready
(sometiems cheap and easy to find)
kevlar gloves, boonie hat, synthetic form fitting clothes(under armor) and tactical boots, tactical goggles, neck protector. all of this is in stealth black camo. and its bite proof
Storm Trooper armour from Star Wars. Has a few gaps for mobility but you're not likely to get bit on the inside of your elbow are you?
OK here's my list for starters.
1. Hard plastic shell shin guards
2. Hard plastic shell thigh and crotch guard
3. Full torso hard shell motocross or hockey chest, shoulderpads and back protector
4. Tactical/Sap gloves
