I've been thinking a lot about this subject lately, but I just can't find an answer.
How did it go from zombies that only ate brains and limp around incredibly slow that moaned,
to zombies that ate just about every part of you, could run, climb, and scream and hiss?

Yep. Your answer actually made me back click and say, yep.
People got bored of the slow style zombies of yore, so Hollywood gave them something new.
For the sake of entertainment everything changes to where the money is, just like how sports change rules for more scoring. When the traditional zombie movies started going straight to video, they probably realized it needed a little something extra. Blame those test groups in the 80s who shot down all the "old school" movies I suppose.
28 days later was a viral infection (rage) they weren't zombies.

The re-make of dawn of the dead was the first time we saw running Zed heads.

There have been a few with running zeds. I don't recall the name but there was one in the 80s or 90s with runners. I'm sure we all recall the naked redhead witht he spiked hair running around. I think it was the same one with the folks in the morgue. They nuke the town at the end.

I won't forget that redhead. XD
Oh yeah. She's not only a runner but a swayer too.

the longing for brains came from a parody to romero's night movie titaled "return of the living dead' they ran ate brains and were funny. this is where the official running zombies came as well as the brain stuff....1990...it continued with four sequels
