So, I want to submit a training video on proper zombie fighting technique. But, I'm not quite sure on how to make it in terms of demonstration. I can't bludgeon my friends with a bat and a human-shaped martial arts target doesn't behave like a zombie. So, any ideas?

they have the foam bats or foam swords and what not you could use one of those and simple explain that your doing it for instructional purposes and in real combat you would use a real weapon also you could focus more on the hand to hand aspect on how to take your target down if you are disarmed
Pretty much hit the head of the nail on that one, do not know if you could do it any other way. Unless you got fruit and did it Mail Call style. Coconut would probably work the best. Test the efficiency of various weapons.
Well as you said you want to do a training video so why not use dummies for that? Then after you have shown the proper technique go back and show a "practical" demonstration via special effects and strategically place cuts like any other movie.

The great thing about making a movie is you CAN bludgeon your friends with a bat. Make a foam bat and pint it black. Then take a real bat and paint it black. Not when you are beating the crap out of the training dummy or other training target use the real bat then switch to the foam bat.

Or another way to do it is camera angles. Watch Shaun of the dead were he is running up to Liz's flat and he bashes the zeds in the head. The first swing he takes does not connect at all but it looks like it did because of the angle and the fact that camera's can not see in 3d. I believe he had a foam cricket bat in that scene but that does not effect the shot.

WARNING: If you do swing just out of reach of you friends please be very careful. When you swing something you actually add a couple of inches to the reach from the centrifugal force of the swing itself. And NEVER swing full force. A quick short swing will look just as effective. Try this on a non-living target first.
