Rosemary brain picatta. ingredients:6oz.brain tissue,butter,flour,white wine,garlic,fresh rosemary,lemon,3oz.capers,and 1/2 cup chicken stock. Heat butter in skillet on high.Lightly coat each side of brain matter with flour,and add to skillet.pan-sear each side untill golden brown,then add garlic,and rosemary.Splash with wine,add capers,lemion juice,and chicken stock.Sauce will thicken as you simmer.Serve with a minced finger orzo,and a nice kianti.
